In the original fairytale, she was pretty much a servant so it would make sense she'd be in the kitchen. The prince even saw her more like a pet than a lover.

Original fairytale is worth reading. You'd see how different it is from the Disney film.

It was in order to be family friendly. When a movie is family friendly, the audience tends to be much wider, thus more money comes into the theatres since parents would have to pay for their child's ticket(s) as well. Before, cartoons were meant for adult audiences since they were the ones who had the money and means to go to theatres (no one had televisions until after World War 2 so the only way to see shows, shorts and movies was by going to the theatre). But as time went on, cartoons became more of a form of entertainment towards children due to the nice colours, sounds, content and character designs which children liked and was considered okay for them to see. Keep in mind, cartoons were still viewed by adults as well throughout the decades. So naturally, when you want to appeal to a wider audience, they would have to remove things that would make children and the easily squeamish uncomfortable. I mean, they did that with Snow White, which was Disney's first animated movie (1937). They removed the gory parts from the original tale, which was the evil queen feasting on what she thought were the heart and lungs of her daughter. Disney's version of Little Mermaid came out in 1989, where things became more strict as to what can or cannot be shown to children. So of course they would remove all the parts where she cuts out her tongue, is topless/naked and dies.
