This is obviously not a studio shot so how do you set up such perfect lighting for your subject while preserving the light in the background? I have tried so many different methods for outdoor shots at this time of day and the background ALWAYS comes out too dark. So if you have the time, I would greatly appreciate some advice.

Try doing some auto bracketing or exposure compensation.
